Ingredients:
- 2 pouches of Simply West Coast Sassy Seafood Curry Soup
- 1 red bell pepper, julienned
- 1 yellow bell pepper, julienned
- 1 small red chili, thinly sliced
- 2 tbsp chopped cilantro
- 2 green onions, chopped
- lime wedges
- 3 cups cooked jasmine rice
Directions:
In a medium saucepan, combine soup, peppers, chili and cilantro. Heat through. Serve over fragrant rice and garnish with green onion and a squeeze of lime.
