Tempting Teriyaki Black Cod with Julienne of Vegetables

Simply West Coast Tempting Teriyaki Marinade sauces up pan-seared snapper to make a sweet & savoury meal.

Ingredients:

  • 8 – 3oz. portions of black cod (can substitute snapper or any type of firm white fish)
  • ¾ cup of Simply West Coast Tempting Teriyaki Marinade
  • ½ cup each of julienned carrots, celery, onions and bell peppers
  • 4 tbsp vegetable oil
  • 2 tsp of toasted sesame seeds
  • Salt and pepper

Directions:

Turn on your oven to 375°F (190°C). While your oven is heating up, place a large skillet on high heat. Season the black cod with salt and pepper on both sides, then add 2 tbsp of vegetable oil to the pan. When the oil starts to ripple, carefully add the cod to the skillet skin or spine side up. Pan fry for 3 minutes without turning it, then turn the cod over and place the skillet in the oven.

Using a smaller skillet on high heat add the other 2 tbsp of oil. Stir-fry the julienne of vegetables starting with the onions, then the carrots and celery, and finally the peppers. When the vegetables begin to soften, add the Tempting Teriyaki Marinade and bring to a boil for approx. 2 minutes. Remove the cod from the oven and plate the portions accordingly.

Using tongs lift the julienne of vegetables out of the sauce and divide them on top of each black cod portion. Spoon the remaining sauce over the fish and garnish with a sprinkle of toasted sesame seeds. Enjoy!
